Dry Rub Baby Back Ribs

A Memphis-style barbecue staple, simple and delicious

Method

Pellet grill

Ingredients

One rack of baby back ribs, mustard, and your favorite barbecue seasoning

Steps

Trim excess fat and remove membrane from bottom side of rack using a paper towel

Apply a light coat of mustard on both sides to act as a binder

Season generously and allow to adhere for at least 15 minutes

Preheat smoker to 250 degrees F

Smoke the ribs meat side up until the internal temp hits 205 to 210 degrees F (4.5-5 hours)

In addition to checking internal temp, use the bend test and a visual check to verify doneness

Remove from smoker and rest before slicing

Pair with baked beans, potato salad, or your favorite mac and cheese
