Reverse Sear Steak
A perfect balance of smoke and sear

Method
Pellet grill + gas grill
Ingredients
One porterhouse, olive oil, your favorite steak seasoning (we used Ben's Heffer Dust), garlic herb butter
Steps
Preheat pellet grill to 200 degrees F
Lightly coat steak with olive oil, then apply a light to moderate layer of seasoning
Smoke steak until it reaches an internal temp of 125 degrees F (1-1.5 hours)
Remove and preheat gas grill to high heat while steaks rest
Sear 2-3 minutes per side or until it reaches target internal temp (around 140 degrees F for medium)
Remove, top with garlic herb butter, and let rest 5 minutes
Pair with salad or brown rice and enjoy
